Becoming a Cook: Ritz Cracker Chicken

Thanks for your support with the doc.  I'm relieved I'm not the only one who totally freaks out.  It was an infertility procedure called IUI.  We appreciate your prayers.  We're very hopeful!

Now, to the chicken!  This recipe actually made too much for us (Which never happens), so I put half of it (uncooked) in the freezer to cook later and half for dinner on Sunday.

2 skinless boneless chicken breasts (I cut mine into tenders)
1.5 cups Ritz crackers crushed
2 Tbsp parmesan cheese
2 tsp garlic powder
1/4 cup melted butter
3/4 cup plain yogurt

Mix crackers, parmesan cheese, garlic powder, and seasoned salt in a bowl. Dip chicken in yogurt, then coat in the cracker mixture.  Place chicken in baking dish and drizzle melted butter over top.  Bake at 350 degrees for 50-60 minutes.

  3. Oh, I'm excited for you guys! Two of my sister-in-laws have done IUI. It was successful for one of them and was a huge miracle. Both of them adopted as well. Children are such a blessing however they come and I will pray that you and Landon get a baby soon. I know this stuff can be so hard. It doesn't make sense that some of the best people struggle to have children, while so many teenagers and drug addicts accidentally get pregnant all the time. I know you will be a great mom though, and will totally appreciate your children when they do come.
