Becoming Gluten Free
Have you heard? Red Robin has a gluten-free bun, and it's soft and delicious. I had mine on the Royal Red Robin Burger (fried egg included). Awesome.
Becoming a Jam Maker
The other day our grocery store was having a crazy sale on strawberries, and everyone around us was grabbing some saying they would make strawberry jam with it. In a moment of insanity, I heard myself say, "Let's get some and make strawberry jam." Next thing I know we're driving away with a crazy amount of strawberries, and I'm thinking, "Um, I've never made strawberry jam and neither has Landon Paul."
Well, that's what FHE is for, right? On Monday, Landon Paul and I made strawberry jam! I know! Crazy! Especially since I don't like jam lol, but Landon Paul loves it and will be set for a while.
We just used the instructions on the back of our Sure Jell Pectin, and it was easy! No joke! It didn't take long, and it honestly wasn't hard. The only ingredients are strawberries, sugar, and pectin. That's my kind of recipe. Now we have a bunch in the freezer, Landon Paul is a happy man, and we tried something new. Life is good.

Becoming a Cook
On Saturday, I decided to experiment with make ahead freezer meals and made Parmesan Chicken based on this recipe. (My gluten-free adaptation is below). We haven't eaten it yet, but I've tucked it away in the freezer for a busy day. All we'll have to do is add sauce, bake it, and put it over gluten free noodles. Have you tried freezer meals? Any good recipes you've found?
3 seasoned chicken breasts
1/2 c. melted butter
2 eggs
1 1/2 c. mozzarella cheese
1 c. Parmesan cheese
Mix together Parmesan cheese and crumbs in a bowl. Mix eggs and
butter in another bowl. Dip breast in egg mixture. Repeat with each
breast. Sprinkle mozzarella over breasts and top. Cook
frozen and covered with foil at 400 for 1 1/2 hours.

I've been trying some recipes from pinterest lately and YUM.

We made these Baby Breakfast Quiches for dinner, and they were so good! I just substituted the wheat flour for a rice flour and sorghum flour mix to make it gluten free. Try it, and let me know what you think!
Becoming Older
Andrea and I have been best friends since we were four, AND we share the same birthday.
We celebrate it together every year, and in recent years, this celebration has included redeeming birthday coupons. Last night we got a free Red Robin burger and a half off Cold Stone dessert. (Ya gotta get on these birthday club lists, folks. Totally awesome).
Andrea and I just get each other. She's the best friend a girl could have, and "I don't have a single childhood memory without [her] in it." (Name that movie).

We made some fajitas using this recipe, and they're magically delicious.
Crock pots are the greatest invention...ever.
Becoming Gluten-Free
This just in:
Disneyland is SO ACCOMODATING to those of us who get painfully sick when we eat gluten. When we were there, we went to Disneyland City Hall and asked about gluten-free menus, and they gave me a stack of papers with restaurants that offered gluten-free food!
I ate GF pizza, a burger (complete with bun), and mashed potatoes and chicken! It was delicious! The bun was definitely the highlight! It tasted like real bread! Seriously some of the best food I've eaten in a year! Just another reason why I heart Disneyland!

I love my life.
Becoming Christmassy Challenge: 10
Ebelskivers (Eh-bull-skee-burrs) were a Christmas tradition in my mom's house growing up. They're like a pancake in a ball. It doesn't sound delicious, but it really really is. Landon Paul made them with this gluten-free recipe from Bread, Love, & Chocolate. (His dinners always seem to turn out better than mine, just an observation). We dipped them in powdered sugar and strawberries, and let me tell you, mmm-mm good! Have you had ebelskivers?
AND we ate them while watching Home Alone. That movie never gets old.

Becoming Christmassy Challenge: 9
One of my favorite things about Christmas is the delicious food and treats.
This is my first gluten-free Christmas, but I'm determined not to miss on the deliciousness, especially when it comes to sugar cookies. Thank heavens there are gluten-free bloggers out there! I found this gluten-free sugar cookie recipe from Delish, and it is nothing short of amazing. I've eaten way too many already, and I think I'll go have another. Happy day.

Becoming Gluten-Free
Dinner at The Cheesecake Factory went like this:Me: "Do you have a gluten-free menu?"
Waitress: "No."
Me: "Do you know what on the menu doesn't have gluten in it?"
Waitress: "No."
Me: "Okay...I'll have an omelette."
Waitress: (Comes back after a few minutes) "Our egg mixture might have gluten in it. What about an egg white omelette?"
Me: "Egg mixture? Yeah, egg whites are fine."
Waitress: "Would you like toast or a bagel?"
Me: "Neither please."
Waitress: "Oh yeah, I forgot."
Me: In terrible/horrible/no good/very bad pain the rest of the night
Some places just don't get the importance of not cross-contaminating.
In better news, some GREAT gluten-free restaurants include:
-Cafe Rio & Cafe Paesan
They're delicious AND have many gluten-free items. Happiness.
Becoming Gluten-Free
I haven't eaten a sandwich since going gluten-free 8 months ago, and I missed it...desperately.
It was warm. It was delicious, and today I'm eating a sandwich for lunch. It's hard to describe the happiness.
Becoming Gluten-Free: Oreos
Last night I decided that I earned the Good Housekeeping award.
For real. I MADE gluten-free Oreos from SCRATCH, people, SCRATCH.
I used this recipe, and they are DELICIOUS. Not to mention, they don't leave the nasty gritty taste that most gluten-free recipes do.
And now I will eat my weight in them. YUM.
Becoming a Cook: Fettuccini Alfredo
8 oz. cream cheese, cut in bits
3/4 c. parmesan cheese, grated
1/2 c. butter or margarine
1/2 c. milk
8 oz. fettuccine, cooked and drained.
In a large saucepan, combine cream cheese, parmesan cheese, butter, and milk, stirring constantly until smooth. Toss pasta lightly with sauce, coating well.
Have a great weekend!
