Becoming a Canner


My mother-in-law makes the most delicious salsa of all time, and I would not joke about such things. I go through a bag of tortilla chips and a jar of her salsa every week and can't get enough of it. SO, last weekend she taught me her skills, and we made 34 jars of  salsa! Coolest thing I learned:

-Put your tomatoes in boiling water for 30ish seconds until there's a crack in its skin. When you see the crack, move the tomato to cold water. Then it's EASY to peel the outside layer off. GENIUS.

Have you ever tried canning? I want to do it again!

  1. I LOVE CANNING! I want that salsa recipe! :) But yes, we can chicken and pork and peaches and pears. So far that's all i've got around to, but I've got a pressure canner if you want to get together!

  2. Yum! Blanching is the BEST! I did it with peaches last year and was constantly amazed how easily the skin came off. If you want to do peaches...they should be about in season!
