Becoming a Cook: Caesar Chicken Casserole

So when Landon Paul and I get home, we're hungry, really hungry.  I just found this website that has freezer meals, and I'm really liking it.  Instead of coming home and having to wait to make and cook dinner, I make the dinner the night before and put it in the fridge.  Then the next day when we get home, all we have to do is stick it in the oven.  It's GREAT, and this one is pretty tasty.

Caesar Chicken Casserole
Chicken breasts, cut into 1/2"-1" pieces
1/2 cup red bell pepper, chopped
1/2 cup green onions, chopped
1/3 cup light creamy caesar dressing
1/2 cup chicken broth
1 1/2 cups Mozzarella cheese, grated
1 12-oz package tubed pasta (penne, macaroni, etc.), cooked and drained
1/4 cup croutons

Combine all ingredients but croutons, mixing well, in a 2 quart baking dish. Allow to cool and freeze.
From freezer (Or fridge if you're just doing it for the next day): Thaw casserole. Top with crushed croutons and bake in 350F preheated oven for 30 minutes or until topping is browned and casserole is bubbly.

    Favorite cookbook, by far, is the Betty Crocker one that tells you everything you could want to know about cooking. Downside is the cost - about $50...
