Becoming a Cook


On Saturday, I decided to experiment with make ahead freezer meals and made Parmesan Chicken based on this recipe. (My gluten-free adaptation is below). We haven't eaten it yet, but I've tucked it away in the freezer for a busy day. All we'll have to do is add sauce, bake it, and put it over gluten free noodles. Have you tried freezer meals? Any good recipes you've found?

3 seasoned chicken breasts
1/2 c. melted butter
2 eggs
1 1/2 c. mozzarella cheese
1 c. Parmesan cheese

Mix together Parmesan cheese and crumbs in a bowl. Mix eggs and butter in another bowl. Dip breast in egg mixture. Repeat with each breast. Sprinkle mozzarella over breasts and top. Cook frozen and covered with foil at 400 for 1 1/2 hours.

Becoming Organized

I know I'm a freak, but I love to organize. It's relaxing and completely satisfying. A few days ago I turned on She's the Man and attacked my scrapbooking supplies. It was beyond fun, and now it's so easy to find everything!

Becoming All Ready for Christmas

Becoming Organized

One of the final projects from our move was organizing the pantry, so Landon Paul and I put our game faces on last night and got 'er done!

One shelf is for breakfast, one for dinner, and one for snacks.
 The left side has gluten food for Landon, and the right side has gluten-free food for me.

 Instant breakfast options are in Ziploc bags and together in this basket. (For us, the key to making more space was getting rid of bulky packaging and putting the food in smaller containers). 
 We got rid of the cereal boxes and put all the cereal bags in the brown basket. It saved so much space, and now when we want cereal, we just pull the basket down and can see everything we have!



Then on the bottom, we have sugar, rice, and gluten-free flour! It was definitely worth the work! Now we can actually see what we have which makes eating, cooking, and shopping so much easier! Woot!

Becoming All Ready for Christmas


We finished all of our Christmas shopping for our families (9 total people) this weekend! Now all we have is to get stuff for each other! Happiness is mine.

I just discovered cozi.com, and I think my life will forever be changed. It has everything! To-do lists, meal planner, calendar that Landon Paul and I can share, and shopping lists! And it's free! Has anyone else used it? Any reviews?

I've always been a little OCD on how things are organized, but this takes it to a whole new level. I can't even wait!

Becoming Organized: Closet

I love organization.  I love the feeling of a cleaning the house and then sitting down with a big sigh knowing there's a place for everything and everything is in its place.  Clutter, on the other hand, seriously stresses me out.  I can feel my blood pressure rise when things are out of place and will work up a sweat making it right.  (I'm nuts, but I'm okay with it).

My closet has everything grouped together by category: Dress pants, jeans, dresses/skirts, shirts, sweaters, and shorts.  (My dresser drawers are organized by pajamas, sweatshirts, etc).  I rotate my tops and dresses/skirts by when I wear them (Once I wear it, it goes to the back of the closet, so things I haven't worn in a while always come to the front.  "Nobody likes an outfit repeater"-name that movie).  Then I have my pants and shoes organized by color.  Speaking of pants, have yous seen this? Hilarious!

I know.  I'm one of THOSE freaks, but I also know I'm not alone.  How do you stay organized?

Becoming Gluten-Free: Pantry

Our "pantry" (Shelving unit) used to have one shelf for cans, one for snacks, and one for dinner foods.  Now  it is organized by gluten-free and not gluten-free foods
One shelf is of gluten-free dinners, one of gluten-free snacks, and one for gluten-free cans.  The last shelf is of gluten food that Landon Paul is going to work on.  
It's going to make my life so  much easier.
